Level 2 Catering and Hospitality Foundation Apprenticeship

REQUIREMENTS

  • Apprentices must normally be aged 16–21 at the start of the apprenticeship (exceptions apply in line with Department for Education funding rules). 
  • Minimum duration of 8 months.  
  • 'Off the job' training must be provided (187 hours).  
  • Support from an employment mentor with regular progress reviews.  
  • Apprentices must meet the required knowledge, skills, employability behaviours and English and Maths requirements in line with apprenticeship funding rules. 

CONTENT

  • Develop the practical skills required to work within a range of catering and hospitality environments, including hotels, restaurants, cafés, schools, hospitals and leisure venues.
  • Prepare and serve food and beverages to business standards while working effectively as part of a team.
  • Use knives, kitchen equipment and technology safely and efficiently.
  • Understand food preparation techniques, ingredient quality, stock rotation and reducing food waste.
  • Deliver excellent customer service and tailor communication to meet individual customer needs.
  • Handle customer enquiries, feedback and complaints professionally.
  • Apply food safety, allergen awareness, hygiene, health and safety, equality, diversity and inclusion requirements.
  • Develop professional behaviours including teamwork, communication, time management, adaptability and personal responsibility in the workplace.

ASSESSMENT METHODS

  • Workplace and tutor progress reviews.
  • Knowledge tests set by the Assessment Organisation.
  • Practical assessments which may include:
    • Workplace observation.
    • Practical tasks or simulated activities.
    • Portfolio of evidence.
    • Projects or presentations (where appropriate).
  • Ongoing demonstration of employability skills and behaviours throughout the programme.

APPRENTICESHIP ASSESSMENT

  • Assessment takes place throughout the apprenticeship and will normally include:

    • Knowledge Test.
    • Practical Assessment demonstrating the application of catering and hospitality knowledge and skills.
    • Confirmation from the employer that employability skills and behaviours have been consistently demonstrated throughout the programme before completion.
